Recipe For Parmesan Chicken

Recipe for Parmesan Chicken – adapted from Stupid Easy Paleo

For the sauce: Make your favorite pasta sauce, or purchase a jar of Organic Sauce – look at the label and find one low in sugar – I personally love Muir Glen sauces

For the chicken:
2 pounds of chicken – breasts or thighs
1-1/2 cup almond flour
6 tbsp coconut oil
3 eggs
2 tbsp butter (or ghee)
2 tsp onion powder
2 tsp garlic powder
2 tsp dried oregano
Instructions

Preheat oven to 400°F
Heat oil in a large pan over medium heat.
In a bowl, add all dry ingredients and mix well. Coat each piece of chicken in the dry mix, dip in the eggs, then back in the dry mix.  Place each piece in the hot butter and fry until brown – about 3-4 minutes on each side.  Remove and set aside while you heat up your sauce.  Use the same pan to save dishes!
Simmer the sauce for about 5 minutes, then add the chicken,  cover and cook in preheated oven for 10 minutes.
After 10 minutes remove the cover.Top each piece of chicken with a slice of mozzerella cheese.
Cook uncovered for another 10 minutes and serve with zoodles!
