One of my favorite meals is zoodles – in fact, I tend to have them 2-3 times a week! Sometimes I serve them with a hearty beefy pasta sauce, sometimes with a wonderful pesto with parmesean and some chicken or shrimp. I also love them with the creamy cashew sauce that is on my recipe page. I’ve even made pad thai and replaced the rice noodles with zoodles!!
Zoodles are so easy to make with a spiralizer! I personally eat 2 zuchhinis myself. Now that the zuchhini season is upon us, enjoy this pasta replacement frequently!
I saute the zoodles in some olive or coconut oil, and then add which ever toppings I decide on from those above. Be creative! And enjoy!
